  • 1 Small Bunch Baby Vidalia Onions Split and Sliced (Including Tops)
  • 2 Lbs Snap Beans
  • 24 Oz Mini Potatoes mixed colors
  • 6 Oz Bacon Chopped
  • 2 Cups Low Sodium Chicken Broth
  • 1 Cup Water
  • 1/2 Tsp Garlic Powder
  • 1/4 Tsp Coarse Ground Black Pepper
  • 1 Tsp Hickory Infused Aged Balsamic Vinegar Olive Oil Divine
  • 2 Tbsp Olive Oil Divine EVOO
  • 1 Tsp Brown Sugar
  • Salt & Pepper to Taste
Instructions
  1. Blanch green beans by plunging into boiling water for 2 minutes. 
  2. Add olive oil to medium skillet, add bacon and cook until crisp, remove and place on paper towel, set aside
  3. Add Sliced baby vidalia onions to pan and saute until soft, sprinkle with brown sugar and slightly caramelize. Remove from pan and set aside. 
  4. Add 1 cup water to hot pan to deglaze, scrape all coating from pan. Pour hot liquid into slow cooker. Add 2 cups low sodium chicken broth. Set slow cooker to highest setting.
  5. Add bacon, sauteed onions, blanched green beans, potatoes, balsamic vinegar, pepper and garlic to slow cooker. Mix well and cover.
  6. Cook on high until potatoes are tender. Turn off cooker and let cool slightly before serving. Add salt & pepper as needed to taste.

Ingredients:

3 large green bell peppers, tops removed and seeded

8 – 10 oz lean ground beef

½ cup frozen chopped spinach

2 tbsp olive oil

2 tbsp Hunts ketchup

½ medium sweet onion, diced

1 cup sliced mushrooms

2 tsp minced garlic

¼ tsp dried oregano

1 ½ tsp minced fresh cilantro

2 ½ cups cooked wild rice blend (from natural food store)

Salt and pepper, to taste

1 cup shredded Italian 5 cheese blend

1 can (8 oz) tomato sauce

 

Directions:

  1. Heat oven to 350 degrees F. Place peppers cut side up on the oven rack. Bake peppers about 30 minutes until soft. Alternately place peppers in boiling water for about 12 minutes till soft.
  2. In a large skillet over medium high burner, heat 1 tbsp olive oil. Add diced onion, mushrooms and garlic. Cook about 10 minutes, stirring until onions are soft and mushrooms begin to brown.
  3. Remove onion and mushroom mix to bowl. Add 1 tbsp water to pan to deglaze and pour liquid into reserved mix.
  4. Add 1 tbsp olive oil to pan and brown ground beef add frozen spinach and cilantro and cook 2 minutes until spinach is wilted.
  5. Return onion and mushroom mix to pan along with cooked wild rice. Cook another 5 or 6 minutes until heated through. Stir in tomato sauce and salt and pepper to taste.
  6. Let cool till warm then stir in ½ cup shredded cheese mix. Spoon mixture evenly into peppers. Top with remaining ½ cup cheese and circle around cheese with ketchup.
  7. Bake peppers another 30 minutes in covered baking dish until warmed through and cheese is melted.
  8. To serve, split peppers down the middle for 6 servings.

Join me on February 11 at the SW Virginia Higher Education center which is pleased to welcome back Larry Thomas, the actor who portrayed the infamous Soup Nazi, in the Seinfeld series. Thomas will be a celebrity guest for the 4th annual Great Winter Soup Cook-Off on February 11, 2017. His “No Soup For You!” bark became one of the most famous catchphrases of all times and earned him an Emmy nomination and a permanent place in pop culture. Thomas’s role in one of the most memorable episodes in the series became an overnight success. This all-time favorite spotlighted The Soup Nazi and the long lines of customers at his restaurant. In order to get to try his addicting soups, patrons had to play by his strict rules or he would yell out “No Soup for You” and throw them out of the store. Thomas will be available for autographs and his cook book and signed ladles will be available for purchase.
Wonderful aromas and good tastes will fill the Grand Hall at the Southwest Virginia Higher Education Center as over 45 chefs and cooks compete for awards in several different categories in this soul warming event to benefit educational programs and enrich the lives of those in our community. A panel of culinary experts will judge the soups in professional and amateur categories. Special cooking demos will be offered.
